Thai Chicken Salad with Peanut Sesame Dressing Recipe
Salad
1 Head Red or Green Cabbage or use both, Thinly Sliced
1 1/2 Cups Carrots, Shredded
1 Small Red Onion, Small Dice
1 Cup Cilantro, Chopped
3/4 Cup Green Onion, Thinly Sliced
1 Cup Cashews, Toasted, Chopped
2 Chicken Breast Grilled, Sliced
Sesame Seeds for Garnish
Place salad over Jasmine Rice, Bean Thread Noodles or just add Ramon Noodles
Peanut Sesame Dressing
1/4 Cup Peanut Butter
2 Tablespoons Honey
3 Teaspoons Ginger, Grated
2 Tablespoons Rice Vinegar
2 Teaspoons Toasted Sesame Seed Oil
1/4 Teaspoon Water
1/2 Fresh Lime, Juiced
Directions:
Chop salad as directed and place in bowl.
Toast Cashews in dry pan. Let cool and then chop.
Grill chicken let rest. Slice chicken into thin strips.
Place salad over Coconut Jasmine Rice or Bean Thread noodles. I also have added Top Ramon Noddles for extra crunch.
Then add chicken.
Garnish with Cashews, Sesame Seeds and Dressing
For Dressing:
Microwave Peanut Butter and Honey for 15-30 seconds until it can be easily stirred. Then add remaining ingredients and stir well.
